  • 500 ml (2 cups) fresh Eureka lemon juice
  • 200 g caster sugar

Method

  1. Combine the lemon juice and sugar in a saucepan over low heat. Cook, stirring, until the sugar dissolves. Increase the heat to medium and bring to a simmer (do not boil or reduce, as the colour will darken). Use a fork to whisk in the agar powder until dissolved. Cool slightly. Pour mixture into a container and place in the fridge for 1-2 hours or until set.
