  • 1 kg green walnuts
  • 280 g (1 cup) rock salt

Method

  1. Check if the shells inside the walnuts have started to form by pricking them with a darning needle. Reserve those that are soft and easy to prick (see tip).
  2. Next, make a brine. Place half the salt and 1.25L (5 cups) water in a large container. Stir to dissolve salt.
  3. Prick reserved walnuts all over with the needl
