Barley adds a very distinctive, earthy, slightly nutty flavour to this crusty white loaf.

Ingredients

  • 260 ml/9 fl oz/1⅛ cups water
  • 45 ml

Method

  1. Pour the water and cream into the pan. Reverse the order in which you add the liquid and dry ingredients if necessary. Sprinkle over both types of flour, covering the water completely. Add the sugar and salt, placing them in separate corners of the pan. Make a shallow indent in the centre of the flour and add the yeast.
