Italians love to use olive oil in cooking, as this bread amply proves. The combined flavours of the olive oil and the biga starter give a rich, earthy and yeasty flavour to the bread.


For the Biga

  • 105 ml/7 tbsp water
  • 175 g/6


  1. Pour the water for the biga into the bread machine pan. If the instructions for your machine specify that the yeast is to be placed in the pan first, reverse the order in which you add the liquid and dry ingredients.

  2. Sprinkle over the flour, covering the water. Make a shallow indent in the centre of the flour and add the yeast.

  3. Set th
