Ingredients: salt and freshly ground black pepper; 1 egg; 90 ml/6 tbsp water; 15 ml/1 tbsp chopped fresh basil leaves; 2 eggs, lightly beaten; 70 ml/2½ fl oz/5 tbsp milk; 140 ml/5 fl oz/⅝ cup sour cream; 75 g/3 oz sliced pancetta or streaky (fatty) bacon, cut into strips; 575 g/1¼ lb/4—5 leeks; 30 ml/2 tbsp sunflower oil; 25 g/1 oz butter; 5 ml/1 tsp easy bake (rapid-rise) dried yeast; 5 ml/1 tsp salt; 225 g/8 oz/2 cups unbleached white bread flour

Method

Pour the water and egg into the bread machine pan. Reverse wet and dry ingredients if necessary. Sprinkle over the flour, ensuring that it covers the liquid. Place the salt and butter in separate corners. Make a shallow indent in the centre of the flour (but not down as far as the liquid) and add the yeast.
