This pretty pale green loaf is flavoured with spinach, onion and Parmesan cheese. Whole pine nut kernels are dispersed through the dough of this perfect summertime bread.

Ingredients

  • 15 ml/1 tbsp olive oil
  • 1 onion, chopped

Method

  1. Heat the olive oil in a frying pan, add the chopped onion and sauté until a light golden colour. Add the spinach, stir well to combine and cover the pan very tightly. Remove from the heat and leave to stand for 5 minutes. Then stir again and leave the pan uncovered, to cool.
