This pretty pale green loaf is flavoured with spinach, onion and Parmesan cheese. Whole pine nut kernels are dispersed through the dough of this perfect summertime bread.
Heat the olive oil in a frying pan, add the chopped onion and sauté until a light golden colour. Add the spinach, stir well to combine and cover the pan very tightly. Remove from the heat and leave to stand for 5 minutes. Then stir again and leave the pan uncovered, to cool.
