A dough that includes potato produces a moist loaf with a springy texture and good keeping qualities. Saffron adds an aromatic flavour and rich golden colour to this bread.
Place the potato in a pan of boiling water, reduce the heat and simmer until tender. Drain the potato, reserving 200ml/7fl oz/⅞ cup of the cooking water. Add the saffron to the hot water; leave to stand for 30 minutes. Mash the potato (without adding butter or milk) and leave to cool.
