These tasty morsels are a Creole speciality, made from a rice-based yeast dough which is then deep-fried. They are delicious served warm with coffee or as a breakfast treat.

Ingredients

  • 50 g/2 oz/generous cup pudding rice

Method

  1. Place the rice, milk and water in a pan and slowly bring to the boil. Lower the heat, cover and simmer for 20 minutes, stirring occasionally, until the rice is soft and the liquid absorbed. Leave to cool.

  2. Add the eggs to the bread machine pan. Reverse the order in which you add the wet and dry ingredients if necessary.
