Tropical fruit juice, fresh banana and dried mango give this light-textured loaf its Caribbean flavour.

  • 45 ml/3 tbsp orange and mango juice
  • 150 ml/generous

  1. Pour the fruit juice and buttermilk into the bread machine pan. Add the mashed banana(s) to the bread pan, with the honey. If necessary for your machine, reverse the order in which you add the liquid and dry ingredients.
