There’s a tempting tropical taste in every slice of this wonderfully moist loaf. Speckled with delicious little chunks of papaya, mango, melon and pineapple, it is topped with a tangy lime soft cheese icing and finished with fresh toasted coconut.

Method

  1. Remove the kneading blade from the bread pan, if detachable. Line the base of the pan with baking parchment.

  2. Sift the flour and baking powder into a large bowl. Then mix in the desiccated coconut. Add the butter and rub in with your fingers until the mixture resembles fine breadcrumbs.

  3. Stir in the sugar and dried tropical fruits. Grad
