Layered with date purée and finished with a crunchy sugar and walnut topping, this cake is absolutely irresistible.
Remove the kneading blade from the bread pan, if it is detachable. Line the base of the pan with baking parchment. Place the dates, lemon rind and juice in a saucepan, add 60ml/4 tbsp water and bring to the boil. Simmer until soft. Purée in a blender or food processor until smooth.
