Chili crisp or oil is a staple in every Chinese household. Growing up, we had at least five different kinds at all times. Every weekend my mom would make some variation of noodle soup and/or dumplings, and the best part was making our own personal dipping sauce to go with it. I would line the jars up like little soldiers on the counter, open every jar, and whiff them one by one, questioning which aroma matched my feelings that day.
