During a family trip to the Philippines, my sister and I discovered mais con yelo, a shaved ice dessert layered with corn, condensed milk, and sometimes corn flakes. We were totally obsessed. It was toothsome, refreshing, and light—a perfect example of how corn is one of those special ingredients that is just as good in savory applications as it is in sweet.
