Kaya, meaning “rich” in Malay, is a coconut jam popular in all of Southeast Asia. Kaya toast is a popular Singaporean breakfast dish: a kaya jam sandwich on grilled white bread with a slab of cold butter in the center. It’s typically served with a small dish of soft-boiled or poached eggs seasoned with dark soy and white pepper. The idea is to dip the sweet sandwich into the salty, jammy eggs and then wonder where this dish has been your whole life.
