Once upon a time, I participated in a baking competition television series whose premise involved recreating iconic American desserts from around the country. For one of the challenges, the theme was Florida, and I made my take on a key lime pie, which was not exactly this recipe, but I did make the same exact pandan-lime curd as below and instead put it on top of a pavlova shell. It ultimately saved my behind and kept me in the competition long enough to make it to the semifinals.
