One of my favorite Chinese desserts as a kid was almond dofu, or almond jelly. Traditionally it isn’t made with almonds at all but instead with apricot kernels, just like our Italian friends, amaretto liqueur and amaretti cookies. This recipe is my take on a Charlotte Russe, a cake made with a wall of ladyfingers and filled with Bavarian cream and berries.
