I went through a phase in my late teens where I was obsessed with Walker’s shortbread cookies. I loved the crumbly layers of lightly caramelized butter and sugar, so rich and filling—yet I could down a whole box in one sitting, no sweat.
One of our signature treats at The Baking Bean was a raspberry shortbread cookie sandwich filled with matcha ganache. For this book I wanted to try and flip the script and make the matcha on the outside and raspberry on the inside. The result is so
