Homemade marshmallows are far superior to the mass manufactured kind. Once you make them, you may never want to go back. They are fresh, tender, and bouncy, plus you can customize them by cutting them into any size you like.
Some of the best marshmallow variations are the old-school caramel-covered ones. Invented by a confectioner from Kentucky in the late 1800s, he called them Modjeskas, in honor of a Shakespearean actress by the same name. For my version, I add red miso to the car
