A far cry from my mother’s Monday dinner breaded veal cutlets, a real Wiener schnitzel isn’t easy to find, even in Vienna. Veal rib eye-pounded paper thin, lightly breaded with flour, beaten egg, and dry breadcrumbs made from Semmeln, classic Viennese dinner rolls, it’s then shallow fried in clarified butter. This classic dish is a mega indulgence for sure, but worth every calorie. On a recent visit to Vienna, I had an opportunity to see then executive chef
