This is addictively good bread for toast, sandwiches and French toast, though it’s also great just sliced and untoasted. Enriched with eggs and a small amount of butter, it’s in the spirit of a brioche loaf, but much less rich. I’ve written the recipe to make two loaves since it’s so easy to prepare. My recommendation is to use one loaf straight away and wrap and freeze the other for later use.
