A classic apple charlotte is made in a bucket-shaped metal mould lined with buttered white bread and filled with cooked sweetened apples. Served unmoulded and still warm, it’s a perfect old-fashioned autumn dessert. I learned this version from André René, the opening chef at Windows on the World.
