Bellini Bar

Traditionally a sparkling cocktail made with white peach puree and Italian prosecco, bellinis can be prepared with just about any type of sweetened fruit, and your favorite sparkling wine. Be sure to set a few bottles of sparkling wine on ice until well chilled, then put out a selection of fruit purees and some elegant glasses. Each fruit blend makes about 1 cup (250 ml) puree, or enough for one bottle’s worth of sparkling wine.
