Reminiscent of lemon poppy seed muffins, these delicate little cookies are the perfect combination of sweet and sour, cute and elegant; they’re tender and buttery with a rich Meyer lemon curd and a hint of nuttiness from the poppy seeds.

For Curd

  • 1 large egg
  • 1 large egg yolk
  • ¼ cup granulated sugar

Method

  1. To prepare curd, whisk together egg, egg yolk, sugar, lemon juice, and lemon zest in a glass or stainless-steel heatproof bowl. Place bowl over a pot of gently simmering water and cook, whisking constantly, until mixture thickens enough to coat the back of a spoon (it should reach approximately 165°F), about 5 to 7 minutes. Do not let it boil.
