Making a bacon cocktail involves a bit of trickery: You want to get the bacon flavor into the booze without a greasy mess. But it’s easier than you think, and best of all, you don’t have to waste any bacon to do it. All you need is the leftover fat.

Ingredients

  • 2 slices thick-cut, smoky bacon
  • ½ cup bourbon

Method

  1. Cook bacon in a skillet over medium heat until fat is rendered. Be careful not to overcook bacon, as it will impart a burnt flavor. Reserve bacon for garnish or for another use. Let fat cool in skillet for about 15 minutes; place a coffee filter inside a fine-mesh sieve. Pour cooled fat through sieve into a heatproof bowl.
