This puffy omelet achieves the dramatic rise of a soufflé but with much less stress for the cook. Enhance its light, pillowy quality by keeping the add-ins to a minimum. A little cheese and some fresh herbs are all it requires. Serve the soufflé hot from the oven, as it will deflate as it cools.
