This savory Asian breakfast bowl is exceptionally versatile. Replace the udon with soba or buckwheat noodles or even spaghetti. Swap the poached eggs for fried ones, or move the noodles to the side of the pan and scramble the eggs, then incorporate them into the noodles as you would with fried rice.

Ingredients

  • lb (680 g) fresh udon noodles
  • 4 large eggs

Method

Cook the udon noodles according to the package directions. Drain, rinse with cold, running water, then drain again. Set aside.
