A crisp, buttery exterior and a hot, melted interior are the hallmarks of a great grilled cheese sandwich. Add thick strips of bacon, generous slices of ripe tomato, and a just-fried egg, and the iconic sandwich becomes ideal morning fare. Swap out the Cheddar for Swiss, mozzarella, or fontina cheese, if you like.

Ingredients

  • 8-12 slices thick-cut applewood-smoked bacon
  • 6 tbsp (90 g) unsalted butter

Method

In a large frying pan, cook the bacon over medium heat, turning once, until crisp and brown, about 8 minutes. Transfer to paper towels to drain. Discard the fat in the pan. Rinse the pan with water and wipe clean with paper towels. Cut each bacon slice in half crosswise and set aside.
