A classic Vietnamese street sandwich, banh mi is made with roast pork and accented with Sriracha mayonnaise, pickled vegetables, and fresh herbs. This riff replaces the pork with bacon for a quick breakfast sandwich. You can make the Sriracha mayonnaise and refrigerate it for up to a week in advance.
