Whether you’re serving savory or sweet crepes, the process for making the batter is the same. Mix the ingredients completely, leaving no lumps (a blender works best), then let the batter rest for at least an hour. Pour just enough batter into the pan to barely cover the bottom and you’ll enjoy thin, light crepes. Each recipe makes about 16 crepes.
