To make good French toast, use day-old bread because the drier the bread is, the more it will absorb the egg mixture. Use bread slices about ¾ inch (2 cm) thick for the best results and add vanilla extract to the egg mixture for greater depth of flavor.
In a large bowl, whisk together the eggs, milk, vanilla, cinnamon, and nutmeg.
Place the bread slices in a single layer in a large, shallow baking dish and pour the egg mixture over the top. Soak the bread for 10 minutes, flipping halfway through.
