This cross between bread pudding and French toast is an ideal make-ahead brunch dish. Blend the egg mixture and add the bread cubes to soak the evening before you plan to serve it. Bake in the morning, then serve hot from the oven with plenty of maple syrup and a sifter of confectioners’ sugar for serving.

Ingredients

  • 3 tbsp unsalted butter
  • 2 pears, such as Bosc, Bartlett, or Anjou, peeled, cored, and cut into 1-inch (2.5-cm) pieces

Method

Use 1 tbsp of the butter to coat the bottom and sides of a 9-by-13-inch (23-by-33-cm) baking dish that is 2 inches (5 cm) deep.
