Classic Popovers

The best popovers boast a dramatic rise in the oven, a lovely browned and crisp crust, and moist, hollow interiors that provide the perfect medium for warm butter and your favorite jam. A popover pan (shown left) is designed with deep and separate cups to promote an even distribution of heat and will ensure the best puff, but a standard muffin pan will also work well.
