  • 4 ripe white or yellow peaches, peeled, halved, pitted, and coarsely chopped + ¼ cup (50 g) superfine sugar + 1 tsp fresh lemon juice

    Method

    Each fruit blend makes about 1 cup (8 fl oz/250 ml) purée, or enough for a bottle’s worth of sparkling wine.
