The practice of making ‘second run’ wines from grapes that have already been pressed is fairly common, and the same thrifty trick can be applied to used elderberries. After making your initial wine there’ll be enough elderberry goodness for another batch, offering you the opportunity to introduce another ingredient to boost the flavour. Plums make a perfect companion to elderberries – and you can use whatever type you wish; we’ve had most success with a mix of damsons, sloes and bullaces.</
