Long before the current trend of customizing cider with all manner of fruity additions, honey was regularly used to bring additional flavour to fermented apple juice and make a drink known as cyser. Unlike the lengthy wait for a more traditional mead, this golden-hued, autumn-born nectar will be ready in time for summer supping. Just be wary of the sting in the tail; cyser is somewhat alcoholic, and will leave your head feeling like a hive full of angry bees if you don’t treat it with the r
