Cider purists, avert your eyes. Although the mixing of these flavours will probably have us driven out of the West Country with pitchforks, we have our reasons… Unless you are lucky enough to get hold of perry pears, the more commonly found dessert varieties tend to be too soft to press and rather bland on their own. Using a combination of apples and pears* makes the juice easier to extract, and the non-fermentable sugars found in pears will give this
