Flavoured ciders are all the rage, and one of the easiest ways of pimping your appley booze is with a simple syrup. Rich has dropped many nectars into his ciders, but his favourite comes courtesy of the rosehip – its sweet, tangy flavours can elevate even the driest cider to new heights.

Ingredients

For the Rosehip Syrup

  • 500 g/1 lb 2 oz/ cups

Method

  1. First, grab a bottle of your homemade Farmhouse Cider, or hot-foot it to your local booze emporium and choose a nice, dry variety.
  2. To make the rosehip syrup, mash up your hips using a pestle and mortar or something similar, then put it in a saucepan with 600ml/21fl oz/scant 2½ cups water.
