The blooming elder is a joyous sight; its fragrant flowers can be seen beaming from hedgerows in late spring, heralding the summer months with their big white faces full of sunny promise (often at odds with the all-too-familiar slate-grey skies at this time of year). Pick them fresh and use them with gleeful abandonment in this classic foraged fizz; it’s a sparkling sunbeam in a glass, even if the weather outside is telling you otherwise.
