These doughnuts are loosely based on a Bangladeshi fried cake recipe called handesh or teler pitha, traditionally made for special occasions. I don’t think I’ve ever seen them on a menu here in the UK, but they are intrinsic to Bangladeshi food culture. I’ve simplified the recipe for a basic sugar handesh and added my own little twist of cinnamon.
