Jaggery, also known as gur, is a wonderful unrefined sugar, made from palm sap or sugar cane juice and then set into solid blocks or rounds. You can easily get hold of it at Asian grocery stores and some larger supermarkets - Taj Stores on Brick Lane stock a good selection.
