This is a typical Mumbai street food dish I absolutely love. My own version of it uses Parmesan, which I put through the mashed potato filling. Once dipped into the spiced gram flour batter and fried, it’s an ideal combination. You get that spicy potato taste and then a slight fruitiness and nuttiness from the Parmesan, which really comes through.
