Crème Brûlée – or, burnt cream – is a dessert I have grown to adore. It consists of a rich custard base topped with a contrasting layer of hard caramel. This recipe takes the dish to the next level because it incorporates paan flavours. Paan is an Indian after-dinner treat made with betel leaf, betel nut, gulkand (sweet rose preserve), cardamom and mukhwas (fennel, aniseed and sesame seed mixture with coconut).
