This is made just like sweet French bread. The combination of one-third wheat to two-thirds white flour makes a light, crackly, and satisfying loaf. You can use any proportion of whole wheat to white flour according to your preference. More whole wheat usually means a slightly heavier bread that has a tighter gluten network but is perfectly satisfying. To increase the loaf size, allow slightly longer time for the final rising.
