This batter can be baked as pan bread, grilled like a pancake, or baked in muffin tins. Whichever way you choose, this is the only corn bread I have had that does not require molasses or honey to brighten it up. A little maple syrup, however, adds a nice touch.
There is a quantity of baking powder in this recipe but it disappears in the cooking and provides just the right lift to the batter.
