Dry Ingredients

  • 8 cups unbleached all-purpose flour or pastry flour
  • 3 cups white sugar

Method

Sift the dry ingredients. Mix the wet ingredients, including the cherries. Add the wet to the dry. The consistency of the batter should be thick and creamy. Fill muffin cups very full to overflowing. Put baking sheet under the muffin pan to catch the drips.

Bake at 350°F. (300°F. in a convection oven) for approximately 35 minutes or until the muffins are golden brown and set in the cent
