It’s a collard wrap. It’s a summer roll. The jury is in: it’s a collard wrap inside a summer roll and pretty much the perfect lunch. Millet is a seed that is often classified as a grain (much like quinoa), and it is packed with protein, which makes these rolls very filling. They come together in a jiff, and the rice paper snugly holding the collard wraps together makes them much more portable (no toothpicks for these rolls, my friend!).
