Years ago, when I worked in a French restaurant, it was my duty to make the cheese-based soup of the day. Of course, I had to use the chef’s recipe, and to be perfectly honest, I never liked any of the soups, especially the broccoli cheddar; it tasted more like grease than cheesiness (much less broccoli).
