This recipe holds a fond place in my heart. One of the perks of living on Skye is being able to dive for your own scallops – and catching and cooking your own produce is incredibly rewarding, especially when it tastes this good. I first made this for my Café Cùil pop-up brunch at Sligachan Hotel when I came back to the island, and it was an immediate hit.
