This is a deliciously light and summery brunch recipe that is a great option when you don’t fancy something on toast. I first came up with it when working at Lighthaus in Walthamstow, East London, and they’re always really popular in the café where we serve them with a fried egg, some labneh and a sprinkling of chopped spring onions. They’re also great as a snack, dipped in chilli sauce.
