I first made this sandwich when I was shooting a recipe for World Gaelic Week from my kitchen. I loved the challenge of speaking Gaelic while cooking, but it was a bit difficult trying to explain words like focaccia, kimchi and sriracha in the native tongue! It’s a great one to try out your new-found focaccia skills: the velvety scrambled eggs are a great contrast to the punchy kimchi and it makes a killer quick breakfast snack.
